If you’re the kind of person who gets decision fatigue just looking at a Las Vegas restaurant map, you’re not alone. The city’s dining scene is wild—in the best way possible. And just when you think you’ve tried it all, Las Vegas throws another handful of brand-new spots your way. This March, it’s not just about what’s cooking—it’s about where, how it sounds, and what the place feels like. Think high-end audio, plush interiors, and food that looks straight off your Instagram explore page.
Whether you’re into Mexican breakfasts, French pastries, skyline cocktails, or soundbar-style dining, March 2025 had something for you. Let’s break down the latest openings—and yes, a few of them are already local favourites in the making.

Two new restaurants from the Cafe Lola team land in the southwest
You might already know Cafe Lola—that pastel-hued paradise with rose-covered walls and fancy lattes. The duo behind it, Alexandra Lourdes and Lin Jerome, just levelled up their empire with two proper sit-down restaurants in the southwest.
At Sorellina Cucina Italiana, it’s all about modern Italian comfort food with a bit of flair. Think crispy zucchini chips dipped in citrus-whipped ricotta and honey (yep, that’s a real thing) and massive veal Milanese served with fennel salad.
Right next door is Emilio’s Contemporary Mexican Kitchen, where breakfast goes big with tropical fruit, steak and eggs, and adorable mini pancakes. Dinner? It’s a handmade tortilla party with tacos, guacamole, and crunchy plantain chips. The vibe is earthy, relaxed, and exactly the kind of place you’d bring your mates—or your mum.

Bar Bohéme brings modern French to the Arts District
Chef James Trees isn’t new to the Vegas food scene—he’s the name behind local hits like Esther’s Kitchen and Al Solito Posto. But his latest baby, Bar Bohéme, is a whole new vibe. Sitting in an old tie-dye shop in the Arts District (because of course it is), it’s all rich wallpaper, soft blush tones, and golden lighting.
The food is French, but fun. Not the kind where you need a degree in fine dining to understand the menu. For example:
- Three versions of steak frites, all with hand-cut fries that go through more stages than your phone update
- Ratatouille, not in a stew, but tucked into a crispy pastry like an egg roll
- Macaron ice cream sundaes. Yes. Ice cream between two macarons, with hot fudge
It’s French food that’s fancy without the faff.

Hard Shake and Peacock Alley open high above the Strip
The Waldorf Astoria gave its 23rd floor a makeover, and now it’s looking very James Bond meets Gatsby. The old Skybar is now Hard Shake, a swish cocktail bar with marbled stone, low lighting, and those classic Art Deco touches that make everything feel a bit more expensive.
Next door, Peacock Alley took over the afternoon tea gig, with delicate sandwiches, scones, and pastries all laid out under soft cream-and-teal tones. It’s the kind of place you’d go for a posh date—or to feel like royalty for an hour.

Echo Taste and Sound fuses food, cocktails, and audio gear
This one’s for the music nerds. Chef Natalie Young shut down her beloved brunch spot Eat to focus on something a bit… different. Echo Taste and Sound, over in the Arts District, is part restaurant, part high-end audio experiment.
There’s food—yes. Fried mushrooms from Desert Moon Farms, charred shishitos, and inventive cocktails that feel like they were designed in a lab. But the real star? The sound. The room is kitted out with McIntosh audio tech and vintage analog speakers pulled straight from Young’s living room.
If you’re the kind of person who’s picky about playlists, or you still swear vinyl sounds better—this place will feel like home.

Liam’s Den & Bubble Bar goes glam at the Venetian
If you want Champagne with a cherry on top (literally), head to Liam’s Den & Bubble Bar inside the Grand Canal Shoppes at the Venetian. It’s sleek, stylish, and yes, there’s a hot pink cherry tree growing out of the middle of the bar.
Drinks lean bubbly and boozy—think Champagne, cocktails, and high-end spirits. And they pair it with nibbles like canapés and fancy meats and cheeses. It’s giving Gatsby, but with a Vegas twist.
